2021/5-6. There was a slight deepening to the yellow here but nothing untoward. This still felt quite early in its second stage, with stony structure. One thing I’ve found when dealing with white Burgundies from this period is that I would rather find what’s interesting and delicious about the bottle I have I. Front of me that stress over whether that one aroma is a hint of 5% premature oxidation or whatever. The only point to that is trying to figure out what to do with any remaining bottles - and even then, bottle variation renders the exercise of limited value. If you love white Burgundy and you opened the bottle, just go from there.
