Okay one more I’m consulting my notes on. This deserves so much attention. It is one of those mystical wines that somehow gives you all the pleasant sweet flavors—honeysuckle, candied lemon and so on, without being sweet. Magic bubbly made by an amazing woman!

Outrageous blanc de blancs. You could fool me into thinking this was Champagne. Cheesy & nutty & honeyed and maybe a crumpet or something--rich palate and tongue-hugging mousse.

Wow, what a nose! Very funky, wild, and biological. At first I was thinking a used sock, but the yeast on this really smells like a crushed multivitamin. The smell carries over to the palate, invoking either cheese or (for me) a white wine mixed with very finely carbonated original red bull. There's a vegetal note as well, invoking unwashed carrots or parsnips. Interesting? Yes. Maybe not something to drink too much of, though.
