The 2020 Chablis Vaillons 1er Cru has a well-defined bouquet with hints of peach skin, undergrowth and resin scents, becoming more floral with aeration. The palate is well balanced with a fine thread of acidity, quite tensile with a touch of dried honey emerging towards the finish, reflecting that warm summer. Very fine. Tasted blind at the BIVB tasting in Chablis. (Neal Martin, Vinous, September 2022)

Initially a muted nose which opened up to white and yellow flowers and with air, ripe fruit aromas - some minerality with a hint of oyster shell. On the palate ripe stone fruit reflecting the warmer vintage - some tropical fruit and ripe grapefruit as well. A saline touch at the finish. Very enjoyable and easy to drink. More new world Chardonnay than traditional Chablis.

I misplaced my notes on this Premier Cru Chablis but I do remember the lovely stone fruit flavours and low acid - quite a ripe rendition for Chablis. The bottom line - Delicious. Can’t see the point of extended cellaring for this one.
