Saint - Bris Sauvignon Blanc
Pale burnished gold. Inviting nose and medium light palate of grassy quince with hints of citrus rind, white pepper, and concrete block. More savory than fruity. Moderate acidity (low for the latitude, but appropriate for the appellation) and an almost tannic mouthfeel (extended skin contact?). Very long finish, even when cold. A food-friendly SB with a bit more versatility than its Loire and Bordeaux compatriots (and definitely more than those from New Zealand). Drink now with seafood, cream sauces, pork tenderloin, or Cajun.

Jul 29th, 2023A distinctive Sauv Blanc from a cold area in the west of Chablis, France. Solid notes of Quincy and hints of lime. Very savory, lingering finish, loved the progression and the clean yet elegant texture. The Wet crushed pebbles make it decent dry as well. Paired it with a grilled mahi mahi fish plate.
