Domaine François Raveneau
Vaillons Chablis 1er Cru Chardonnay

This was way more lively than the Foret 2011 from last week. Honeysuckle, lemon and stone fruit.

Another day, another bottle of Raveneau. This 2011 vaillons was singing. It built as it opened up. Started off as beautifully as it finished. The only thing that strikes me as 'chablis' is the oyster shell on the nose and the underlying minerality. Otherwise this is a big and thick Chardonnay with an almost oily texture. It is my kind of wine but not an everyday kind of wine either

Sulphuric salty air on the nose gives way to the impeccable lavish Raveneau mouthfeel and palpable tension. These wines are just so compelling and readily identifiable. I like to think I could identify them blind. Lots of depth here with citrus zing and honeysuckle. A slightly off putting waxy finish dissipated quickly. Even better on day 2.

More like Rava-yes. Everything you want it to be and then some.

Needs a long decant. Flint, steel, leesy opulence.
