Vaillons Chablis 1er Cru Chardonnay

Wonderful stuff. Really vivid and precise. Light and deft. Stone and delicate lime. Crisp. Gorgeous.

This is really classy. Restrained but powerful and clear. A hint of lanolin, lemon oil, steel, oyster shells. A soft plasticine like thing. This is lucid, focussed and gorgeous.

Wonderful limpid pretty fruit. So defined and precise with real presence in the middle. So settled and complete. Delicious.

Everything you look for in a Chablis. Wonderful citrus, hints of pear, minerals. What was really impressive was the depth of fruit in it tonight. Mixed with the savory tones, it was thrilling.

Nice bottle to split for the table.

Still has yet to enter the honeyed stage. Firm, chiseled, and articulate.

Very pure and expressive notes of hazelnut, ripe lemon, and ripe stone fruit. Finishes long and gracefully.

Wow! Amazed by the topography of this wine. It was quite a palate experience! Insane lift and persistent finish. Benefitted from 4 hours of air, not to mention 10 years of cellaring. Utterly beautiful, particularly with the white asparagus and morels at Melisse. Would never have guessed not grand cru.

Lovely pretty nose. A touch of honey, bright white flowers. That saline, rock pool limestone note. Really poised and beautiful. Looong. This is great and quintessential Raveneau
