Vintage 2007 | My Love always gives the same reaction after tasting a wine. This is a friend! Or not. The wine is matured in barrels under a layer of yeast (sous voile) for 6 years and three months. It has a mesmerizing smell of hazelnuts and almonds. That is... if you like it. A smell with oxidation tones, similar to eg sherry. The first sip was harsh, but it came from the fridge. After a few hours in the decanter and at 18 degrees Celsius the taste is round and harmonious. We paired it with the ultimate classic dish to combine with: Chicken (from a slow good farmer) with morels in a creamsauce and black rice. For me: heaven. For My Love? She appreciated it too and said dryly: not for novices...
