Perfect companion for choux farcis à la sauce tomate and "Adventures on the Wine Route." Day 2: really starting to open up. Dried meat, coffee grounds, fennel, ash, baked earth, garrigue, grilled plum, fresh leather, peppercorns. Structurally there is more presence too. Those rustic and coarse tannins are more expressive but not at all unpleasant. Acid is balanced for me.

Dark fruit, a little spice, a tiny bit of richness. Really like it. Drank with sautéed duck hearts with olive oil, garlic, and parsley (a la rusty) at HCL 2016-17. Drinking really well.
