Perfect companion for choux farcis à la sauce tomate and "Adventures on the Wine Route." Day 2: really starting to open up. Dried meat, coffee grounds, fennel, ash, baked earth, garrigue, grilled plum, fresh leather, peppercorns. Structurally there is more presence too. Those rustic and coarse tannins are more expressive but not at all unpleasant. Acid is balanced for me.

Over ripe blackberry, blueberry, stewed plum, moving towards dried, licorice, garrigue, cocoa, raspy herbs, ash, lavender, cinnamon and clove, some cigar notes. Elevated tannins and moderate acid on a full and rich frame. For how much weight it has there is plenty of finesse and purity.
