Very smoky, gassy, brooding, meaty, closed at first. Served far too warm. After a spell on ice, black cherry, cola, floral perfume, anise emerged. Temp SO important. Lovely with wild salmon. Needs time.

Stewed, cranberries, strawberries, rhubarb, cinnamon stick, hint of nutmeg, light mushroom, forest floor, nice chalky minerality. Soft, smooth and elegant on the palate.

A gem of baked cherry and strawberry pie deep inside an old dank mountain cave. A touch of bret, deteriorating deciduous leaf, reminiscent of long-issued French Oak. Framed by an ancient expression of organically starved terroir.
