Medium acidity and flint mineral form the modest structure from entry to the moderate finish. Classic Fourchaume roundness with the extra mineral of the "dead man" makes for an excellent "all around" Chablis that can handle heavier fare than one would expect from the broader appellation. Weighty shellfish are naturals, of course, but roasted poultry or pork will also show quite well. Drink now through 2025.
