Star bright yellow gold. Inviting nose and medium light palate of tart yellow apple, with the palate adding a flinty mineral note that's classic Chablis. Acidity is medium plus: just right to support a wide range of cuisines. Northern French and seafood are obvious pairs, but I enjoyed with the Louisiana favorite, jambalaya. Drink now through 2026.

Star bright pale gold. Shy but inviting nose and medium light palate of ripe green apple and flint. Medium acidity and flint mineral form the modest structure from entry to the moderate finish. Classic Fourchaume roundness with the extra mineral of the "dead man" makes for an excellent "all around" Chablis that can handle heavier fare than one would expect from the broader appellation. Weighty shellfish are naturals, of course, but roasted poultry or pork will also show quite well. Drink now through 2025.
