Our introduction to the Côte d'Or - this wine evolved from raspberries, to mustard and then leather and undergrowth as the meal progressed. Coupled perfectly with the best jambon persillé I've ever tasted, stone-ground tarragon mustard from Edouard Fallot in Beaune and beef cheeks poached 12hrs in Pinot noir. Happy days!
