2021/9 as an aperitif, with shirasu and aosa linguine, etc. On opening, this had a ton of bright lemon and white flowers, with a touch of stone fruit and lots of vibrancy and cut. Over a couple of days, though, it became more savory, mineral and rich, with some buttery pastry. It’s hard to imagine more enjoyment from a bottle of white Chalonnaise in this initially “lighter” but deceptively layered style.
