Another anniversary, another bottle of '04 Champagne (not that I'm complaining). A unique Blanc de Blanc that has a color almost reminiscent of Mountain Dew (yes, that yellow). Biscuit dough, green apple, green pears and a flinty minerality greet the nose. Sharp acidity and a strong minerality flash through the palette, followed by candied apple and yeasty dough. The balance seems a bit off, but that doesn't take away from the sheer enjoyment of this Champ. The lingering finish will have you thinking about this wine long after you've sipped.
