Just a small taste today; testing out the durability of a cork over time with the coravin system so will give this a stress-test of 20+ punches over the next few months. The wine is holding up well; a lovely golden hue with a nose of apricots, mandarins, orange zest, and a hint of creme brûlée. Not the most complex of sauternes but it has plenty of richness and sufficient acidity to bind it all together.

Because the champagne wasn't impressive I went into the deeper parts of my cellar to dig up a sweet wine which I knew would please the crowd. 21 year-old and kicking!
Apricot, honey, dry fruits, hasselnuts, wax, preserved orange peel, sweet bready touches too. The botrytis thing is strong! The palate is surprisingly long, easy going and fresh! It was a very hot vintage but it seems they managed to keep some freshness in the berries because the acid drive, which is massive, is balancing the sweetness of the wine so much that it's almost a palate cleanser. Apricot and honey notes all long, before a very long and fresh finish that goes on for a good 35 to 40 seconds. We need to make Sauternes a hot thing again !

Orange, apricot and sweet, candied citrus side of the style, there is a tangy, bright, crisp, sweetness to the honeyed fruit here. Great with stinky blue cheeses.
