Nothing screams for Carignan like sub-zero wisconsin weather and an amazing charcuterie board at my sisters James Beard finalist restaurant. Carignan has never been known for finesse, and this is no exception. But who cares? This wine warms the soul with its chewy tannins, dark fruit and warm alcohol. The salty cheese and meats help draw out more fruit from this wine and fill the mid-palate where Carignan can be a bit hollow. A perfect pairing and joy to drink!

Jan 26th, 2019Exactly what I love with a Languedoc red. We decanted for two hours and enjoyed a nose of stewed plum and star anise. A blue-violet colour, full bodied but not over-powering. Flavours of blackberry, fig, bell pepper and tobacco. We paired it with grilled salmon done with a maple, miso glaze.
