Definitey needed 1 hr+ of decanting before truly open up, once there you get cassis and dried herbs (sage & oregano) on the nose. Blackberry on the palate with gamey undertones such as leather and roasted meats. Finishes quickly and feels a bit disjointed, but those are minor complaints at this price point. Paired well with reverse seared strip streak topped with ramp butter! ($8) [5/2/21]

Nov 11th, 2016Subtle hints of charred bluefin tuna belly and melted 75% cacao fondue. Nose is mild with berry scents and a smokey salt. Finishes well, strong tastes of ground asparagus and liquified paper. Pairs well with imitation crab meat and exotic string cheeses.
