Session 2 of Wine Essentials One at the Institute of Culinary Education Center for Wine Studies.
A Sémillon/Sauvignon Blanc blend from Entre-Deux-Mers, Bordeaux, where the cool ocean air tempers the climate. 85% Sauvignon Blanc and 15% Sémillon. The color of the wine is an intense, bright yellow with a slightly cloudy tinge. It is evident that this is from riper grapes. I pick up the green grassy notes of the Sauvignon Blanc on the nose, but the Sémillon gives it a fruity quality of stone fruit and citrus. Tropical fruits and pineapple are also present in the aromas. The wine has a bright acidity and fruity flavors of peach, melon and honeydew.
