Nicely evolved SB with ripe quince & pear, with some hay & dried flowers as a touch of butterscotch. On the palate shows rich, ripe fruit (pears & apples) yet with a underlying core of flinty, mineral acidity. This has precision and purity. Partially fermented in oak, which adds a nice roundness to the otherwise mineral wine.
Quite similar in structure to a good evolved Riesling.
