Leaves a little to be desired at the first 3 hours, by the 4th it's starting to open. 5th hour, in the zone. Tart cherry and anise on the nose. With notes of dried cherries, apricot and leather on the mid palete. Lasting finish with good acid and slight bitterness. It was delicious with rosemary ribeye and acorn squash.
