Mellow oak and red miso aromas when I first uncorked it. Fresh tart red cherry and not quite ripe blackberry. A mild feeling of pop-rocks exploding on your tongue. Unfortunately I feel like the winaker felt like he needed to acidify this. And a residual taste of yeast in this natural unfiltered bottle. I wonder what would happen if I layed it down for a couple years? If you're going to open it up now then serve it with good quality Chinese or Burmese sweet and spicy foods.
