This has been in the cellar a while and i could not find a bottling or disgorging date. Pours medium gold with a healthy and rapidly diminishing mousse. Nose is white chocolate, golden fruits, autolytic yeast, clean button mushroom. Palate is richly textured as opposed to incisive. I may have prefered an impression of additional acid, but this went well with grilled salmon.

Bodacious bubbles. Don't know too much about capital C Champagne, but this suited our palates.
