Macabeo outside of Cava! Pale straw gold. Abundant nose of hay and stone — along with the variety’s traditional role in sparkling wine — belies a relatively low-acidity (medium minus), medium bodied palate of baked apple, hay, dry honey, and a stony finishing element. Flavors hit in layers of complexity, offsetting the low acid shock. I need to experience this more often, but it comes across better as a pair for your roast chicken than for your salad. Paella or pork dishes would work as well. Drink now.

Nose is tart lime. Taste is unripe pineapple, nectar and minerals. Finish is acidic with tart finish.
