Spice and cedar combine with violets. How to make a fun wine without it being silly and frivolous? Like this. You don’t typically see single varietal Counoise, especially not domestically. Spice is dominant throughout the attack with bright acidity and a highly pleasing mouthfeel. The earthy elements really show on the palate with some forest floor and dried herbs. Cherries, plums, and more strawberries shine here. A little vanilla and a ton of wonderful spice. Serve chilled and it will be spectacular.
