Very enjoyable Cabernet Sauvignon from Paso. This is very young and tight knit. Silky tannins, oak, fig, plum, black fruit. After about 2 hours in the decanter it is really showing well. Hold on to this one a few more years.

Stewed dark fruit, plum, dates, cooked raisins, candied cherries, black tea, grilled mushrooms, cedar, American oak coconut notes, moderate plus tannins, and high acid. This Cab should pair well with braised and charred meats (and maybe fruit cake?). A little tart now. I’d love to try this wine with more age on it.

After following AH on Instagram for a few months it peaked my interest in wanting to taste their wines plus they look like a fun group too. To my surprise somebody bought a few bottle to Thanksgiving dinner. I am very happy to report it was even better than expected. Deep rich ruby color looking like a huge Rutherford tannin monster. The nose was subtle and pleasant. Two sips in I was beliver.. smooth, delicate soft cabernet. Would probably improve if opened and breathed a bit but consumed before it had a chance.. black cherry, currants, almost a slight zinfandel like notes. enjoy now!
