Saint August Assyrtiko

Color of golden straw with a cloudiness since it’s unfiltered. The nose is lovely...tart apple (crab or green), fresh off the rocks ocean spray with a lovely salinity, seashells, golden raisins and a touch of honey. Upon taking a sip my mouth salivates everywhere. The seashells, salinity, golden raisins, and hint of honey come through immediately and last for some time as the salinity picks up, the tart apple peaks it’s head. This is screaming out for seafood or fish to pair, but can easily do without. There’s good body to this, more than your typical assyrtiko.
