Cider is the quintessential American beverage. Drank by early settlers and founding fathers, it was ubiquitous and pervasive, but following Prohibition when orchards were destroyed and neglected, cider all but disappeared. In The Cider Revival, Jason Wilson chronicles what is happening now, an extraordinary rebirth that is less than a decade old. The style and shape of the vessels reflect the era in which each wine-loving author wrote their vintage lines: An Elizabethan chalice holds verse from Shakespeare, while a slender, stemmed glass is inscribed with words by Baudelaire. Cabernet Sauvignon Blend 2009

Enjoying this bottle already for some weeks with the Coravin.
Sure this has the potential to age longer but why wait? Every glass is a joy! Leather, cocoa, pipe tobaco, black currants, dried bay leaf. Fantastic wine!

Shacksbury

The Basque Craft Cider

Wow. Really impressive go at Basque cider from Shacksbury, which has quickly become one of my favorite cider producers in the US. Bone dry, great acid, perfect amount of volatile vinegar-y funk, with a great savory side. Delicious essence of tart, slightly bitter apple. I believe this is actually done in collaboration with a Basque producer using local apple varieties. Definitely captures a very similar character to what I expect from Basque cider. Great stuff. — 3 years ago
