Racy and tense w/ searing acidity and a very long finish. Great as a palate cleanser and for those who love the leaner, more energetic style of Champagne.

2022/2/10 with buri daikon, etc. Very nice, with lemon tart, brioche, and chalk. While it’s not yet mature, that rich, toasty character that great blanc de blancs when it is really ready to start drinking. Much drier than the Conversation (which of course is brut - but it’s a bigger difference here than it is with some wines).
