The definition of refreshment. Dried strawberry, tart cherry, lime zest and watermelon rind. Loads of mouthwatering sea brine to go along with the lively acidity. Red and white rose petals and a touch of white pepper round it out nicely. Paired this with shrimp and homemade mango salsa... Killer!

Continuing with the theme of the night, this Txakolina is fueled by striking salinity, tart white cherry, and ever so slightly green watermelon. Zest, effervescence, acidity, and wet slate are present and complementary, but the sheer amount of tart fruit and salinity are the main distinctions.
