Made by a small scale Seattle distillery, flavored with Theo Chocolate cacao nibs. It’s a crème de cacao, a liqueur, a cordial. Clear, smells like grappa or maybe really weak or diluted moutai, so slightly aldehydic nose. Medium sweetness, probably sucrose, pleasant mouthfeel. Very nice flavor, the quality cacao nib profile shows. Some may be put off by the nose, but my partner and I found it highly sippable. Paired well with red pear slices and a homemade cocoa-dusted flourless almond cake with almond yogurt. — 5 years ago
