Elixir Palomino - Muscat Blend 2021

Blend of 60% Palomino and 40% Moscatel, from two different vineyards, both farmed biodynamically. The Palomino comes from La Platera vineyard in Pago Miraflores (albariza soil), while the Muscat comes from Pago Abulagar ( sandy-clay soils). Fermented and aged for 9 months in used oak barrels. Very aromatic, perfumed, a bit natty. My least favorite of the lineup. — 5 months ago

This is their entry-level wine, 100% Palomino from the La Platera vineyard in the Pago Miraflores. Vines are about 25 years old and rooted in albariza lustrillos soils. Fermented and aged in stainless steel (no oak barrels, no flor). Intense, mineral nose with flinty notes. Dry, fresh, saline, elegant. — 5 months ago

Fresh, elegant Manzanilla by Sherry legends Ramiro Ibañez and Willy Perez, who recently joined forces to preserve the historic brand Manuel Antonio de la Riva. 100% Palomino from Pago de Miraflores Baja, fermented in stainless steel and aged under flor for about 3 years. Yeast and almond aromas and flavors, with hints of olives. Dry, saline, sapid, very tasty. Quite intense. Long finish. Excellent — 3 years ago

Ube de Ubérrima Carrascal White Blend 2019

Blend of different types of Palomino (Palomino Fino, Palomino Jerez and Palomino Pelusón) from a single vineyard within the Pago de Carrascal, in Sanlúcar (not to be confused with the eponymous Carrascal in Jerez, further inland). Located to the south of Miraflores, this is one of the most Atlantic influenced Pagos in Sanlucar, and also one of the first to be replanted after phylloxera – with vines over 100+ years old. Manzanilla En Rama La Especial Palomino Fino 2015

Now that’s a BIG yeasty/flor bread dough nose, salty and marine. Gold in the glass, almost green on the nose. For a ‘15 it’s bouncing fresh, some apricot, almonds and citrus rind( Meyer lemon). On an 86° eve , perfect even w rice/beans. Some shellfish would be ideal.
So refreshing you better watch the 16°!
Single vineyard, from the Pago de Miraflores. Suave, not a hammer,
a voluptuous texture.

Wellington 20 Years VOS Palo Cortado Sanlúcar de Barrameda Palomino Fino

VOS (very old Sherry), 100% Palominofrom the estate’s vineyards in Pago de Miraflores in Sanlúcar (just 3km. from the Atlantic Ocean) and Balbaína in El Puerto de Santa María, also exposed to the Poniente winds from the Atlantic. Due to this Atlantic influence, wines from these Pagos tend to be lighter, more delicate than those further inland, and this is a great example. Delicate, elegant nose with aromas of orange peel, raisins and a hint of spices. Slightly salty (clealy Sanlúcar). Persistent, hazelnuts — 2 years ago
