"We brew it with a mash of 2-Row malt and 440 pounds of local raspberries. Shortly after primary fermentation in stainless steel with our house yeast strain, the beer is aged in red wine barrels with a blend of Lactobacillus and Brettanomyces. After 18 months, fresh local raspberries are added to a portion of the barrels. The beer continues to age on the fruit for an additional 6 months, at which time the barrels are blended to strike the desired balance of fruit and funk. Mattina Rossa has an aroma of fresh raspberry, strawberry preserves and lemon rind, and tastes of raspberry and pomegranate. Owners Dan and Deb Carey have grown New Glarus Brewery to the 25th largest in America. The flagship brew is Spotted Cow, sold only in Wisconsin . @ delactable cream ale description is incorrect!
The goal was to brew a recipe that farmers would enjoy.
They call it farm house ale, unfiltered and cloudy. Pilsner malt, caramel malt, white wheat, and saaz hops. Hard water comes from the brewerys own deep well .
