Old school rustic Italian, quite dark fruited, salty. Medium body. Very tannic on the back end, very structured wine. Substantial acid. Needs a couple hours of air to come together and show properly. Pair with 🍝 for a pretty pretty good time. // turns into something special on day 2 — 7 years ago

@Jenks honestly, most red wine I drink these days I prefer on day 2. When I open a bottle I usually immediately decant half of it to my trusty 375, cork it, and stick it in the fridge. 2-3-4 days later these babies sing!

@Jenks the bigger, more conventional red wines I mean. The super natty, lighter / carbonic / no SO2 stuff doesn't usually hold up so I pound that. Heyo.
