I've had two runs at this one and the complexity of the nose alone is an exceptional experience. Anise, coffee bean, peppermint and many other subtleties. Still, I think some more time will really make this exceptional. — 9 years ago

As mentioned before, one or two hours to open recommended for sure. I had it with a dry aged NY strip. It paired perfectly with the fatty portion of the meat, which leads me to thing this may be better with a prime rib. — 9 years ago
