St. Vincent's Private Hospital Toowoomba Classic Dry White

Somewhat of a story attached to this old Tyrrells Semillon based White. My mother in law Fiona, passed away unexpectedly 3 weeks ago, a month short of her 90th birthday. My wife has been cleaning out the house with her sisters and found this old bottle standing up in a kitchen cupboard. Fiona and her deceased husband David were tee-totallers. Barb brought the wine home and looking at the colour of mid gold I thought this would go straight down the sink. After a night in the fridge I opened it up and gave it some air. After 15 minutes I poured a glass and received surprisingly good aromas of Hazelnuts Honey and mouldy Apple. Fleshy palate with some oxidative notes as expected. Amazing how Semillon fills out and puts on weight with age from a green acid monster in its youth. A total pleasant surprise showing the cellaring potential of Hunter Valley Semillon even in poor cellaring conditions. David was on the Board of the hospital for many years.
