Very fresh nose, not unlike that of a jurançon blanc across the border, a tiny bit to the east. Lime, green apple, a tiny bit of a yeasty thing (did it stayed on lees for a while?). The palate shows crisp acidity, some nice citrusy and green apple notes, some width, a strong grip, and a very long and fresh finish that cleanses your palate and make you reach for another sip. We had it along gilt-head seabreams and it's a pairing made in heaven.

Blend of indigenous varieties Hondarrabi zuri zerratia (Petit Courbu), Hondarribi zuri (Courbu Blanc) , Izkiriota handia from vineyards in Kortezubi, near Gernika (Bizkaia). Fermented in stainless steel with indigenous yeasts, 4 months with lees. Citrus and minerals. Refreshing, good acidity
