Kamatsuru Soukaku Junmai Daiginjo

Beautiful presentation. Stats below but this is for me now a classic Yamaha rice / Hiroshima sake. The flavors line up with the last couple I’ve had and while a bit sweeter and heavier on the palate it’s very similar. The sweetness hides a bit of the alcohol and the color is clear as water. The aromas are light and I suspect that’s due again to the age of the sake. The box label (under the US label) says the bottling date required by Japan law, is on the bottle. Unfortunately there is no Japan label on the bottle, only a US one, which has no date. Yesterday’s SMV I think was a -2.5, so I’m putting this at a -3.5 and I really want to say -4 but the acidity is probably the difference. As it warms you get more alcohol and a little bit of bitterness imho. With air, I bet that would go away like the others did. Editing my score down. As it warmed and I had more, I found it cloyingly sweet.

In a word... Beautiful.
