Kudoki Jozu (くどき上手) Junmai Ginjo

Brewery: Kamenoi Shuzo, Tsuruoka, Yamagata
Classification: Junmai Ginjo
Rice: Shonai Miyama Nishiki
Polishing: 50%
ABV: 16–17%
SMV: +1
Acidity: 1.2
Yeast: Ogawa #10
Prefecture: Yamagata

This is the standard Kudoki Jozu Junmai Ginjo, recognizable by the ukiyo-e woman label. Kamenoi Shuzo uses highly polished rice across its range and is particularly associated with #10-family yeast, which tends toward lower acidity and an elegant aromatic profile. This bottling is described as soft and clean with a gentle floral character and notes of green apple and pear.

Tasted at Sake Day SF — 9/26/2026. Rating is limited since the same glass was reused throughout the tasting, making it difficult to get a truly clean tasting and accurate read on the aromas.

Kudoki Jōzu Junmai Ginjo
• Brewer: Kamenoi Shuzō Co., Ltd. (Yamagata, Japan) This was all part of our Sake Day 2025 experience. We only tasted 60ish sakes out of an estimated 450, so a small fraction of what was available. While I attempted to rinse the glass with water and stay hydrated it’s difficult to fairly rate in this environment and I use it solely as a time to try a wide variety and interact with the brands.Thin
