Il Ceo
Vespri Vespaiola
Fermented in stainless, 24 hour maceration. Then 6 mo. in old barriques. Unfiltered. 12.5% abv. This is their still white made from Vespaiolo, a varietal mainly grown in Veneto (northern Italy) but not sweet. They also make a sparkling and I think an orange version with longer skin contact.

Jan 15th, 2024Pale yellow with a bit of haze. When I first opened it, I got fresh baked banana bread with chocolate chips (there was a sweetness there that would be the chocolate), with notes of cooked lemon, and a bit of reduction. Very fine, almost effervescent bubbles. Tart cooked lemon curd, ripe Bartlett pear, wet stones, some chalkiness on the palate. Medium acidity, and dry. Finishes on some mild astringency that brings to mind green plantains.
