Gentilini
Cephalonia Robola

Acidic and mineral at first - softened with time. Crisp, green, mild dryness. Honeysuckle, and white flowers. Slight stone fruit.

I love Gentilini's sexy, opulent red wine, "Eclipse," but this shape-shifting white Robola started shimmering, plush, and phat, but as it warmed up next to spicy fare, a honeyed Semillon richness arrived. Really good at either end of the spectrum!
