Prior notes still apply, a wonderful bottle, decanted 8H.

👃 Black cherry, ripe red cherry, dark cocoa powder, light barrel toast, plum skin, washed blackberry and crushed blueberry; 👅 Ripe black/red cherry, wet leather, high cacao content chocolate, under-ripe plum, wet clay and trailing hints of dehydrated mint.

Paired with a slow roasted beef roast from our favorite local farm (Kinderhook Farm; Valatie, NY).

Just concluded the annual Fall seclusion at our cabin in the Rangeley lakes region of Maine, mobile service up there is mostly non-existent, after several days I am posting again. Notes are somewhat brief, as my focus is relaxing and watching the Common Loons swimming and diving in the cove in front of our camp.

Decanted 6+ hours, no new notes; a fantastic St. Emillion!
Nose has black cherry, ripe red cherry, dark cocoa powder, light barrel toast, plum skin, washed blackberry and crushed blueberry.
Palate has ripe black/red cherry, wet leather, high cacao content chocolate, under-ripe plum, wet clay and trailing hints of dehydrated mint.
Awesome pairing to Allen Bros. USDA Prime beef fillets, three day salt rest and Hickory smoked on the grill to ~130° = Heaven, should you believe in such post-life retirements.

We're entertaining my in-laws and parents today, fun 🤷‍♂️. Bottles go fast when you're pouring for six glasses.

Consistent notes from our prior bottle, a few weeks ago, decanted 5+ hours:
Nose has black cherry, ripe red cherry, dark cocoa powder, light barrel toast, plum skin, washed blackberry and crushed blueberry.
Palate has ripe black/red cherry, wet leather, high cacao content chocolate, under-ripe plum, wet clay and trailing hints of dehydrated mint.

Paired with a local, 3.5lb. beef roast, slow cooked at ~200°F for 3.5 hours, beautifully medium on the core temperature. Local potatoes roasted then covered in a herb/shallot compound butter, so yum!

Nose has black cherry, ripe red cherry, dark cocoa powder, light barrel toast, plum skin, washed blackberry and crushed blueberry.

Palate has ripe black/red cherry, wet leather, high cacao content chocolate, under-ripe plum, wet clay and trailing hints of dehydrated mint.

Likely contender for top value wine, I think we paid ~$18 for this and it's just killing it for that price point, so good. I'm going back to get more tomorrow!

Paired with a local, bone-in sirloin, so large that between my wife, me, and four slightly hungry felines, it could not be finished in one sitting. Long and slow grilled, there was a beautiful crust to the meat. Paired alongside fried polenta, and slowly caramelized onion, absolutely everything worked together just fine.

This bottle was a gift from a friend and my first Bordeaux. I was intimidated, but after decanting it for 8 hours it opened up and was excellent.
