First Sauternes! Seriously intense stuff. Paired with a nice stinky, salty Roquefort and some Serrano ham and the pairing was out of this world, particularly with the Roquefort; with the cheese it was a study in extremes, for sure. The richness of both just came together in such harmony. The wine was intensely honeyed, with sweet white peach fruit and candied ginger as well. Alone, it was definitely cloying (which is why I'm not scoring higher; if I was rating the pairing it'd be near perfect) but with the cheese it was a great counterbalance. Full bodied and richly textured. I wouldn't describe it as *flabby* since it wasn't lacking acid; rather it was just so sweet that the acid still didn't quite counterbalance the RS as much as I would like. A smack in the face with richness and certainly some territory I look forward to exploring further.
