(***) this creamy little lemon tart was supposed to be simply an opening-act apéritif, but its rich body, complex citrus notes, and kiss of sugar made it the star of the dinner, beating out the multiple Soave wines that were supposed to be the pairing stars of the evening (paired with linguini and white clam sauce).
