
"Fare le grane" is the process of restarting a nearly complete fermentation by adding reserved overripe grapes to the vats. Not entirely different in theory from ripasso, but emphasizing fresh & floral aromas over raisins. Correspondingly, the wine finishes full bodied at 14% & dry but not bone dry.
