With approximately 95% of Prosecco made in the Charmat method (secondary fermentation occurs in large pressurized tanks), this charming sparkling wine is an exception to the rule worth seeking out. The producer recommends using a large (prosecco) crystal glass—instead of a flute—to allow full expression of the wine’s bouquet.
