Nov 27th, 2015Unique. (I'd compare it to something, but the 'comparison police' are out in force tonight.) Biodynamic grown Paso Robles Sangiovese planted in 2004 at 12x12 spacing on its own rootstock on a SE facing hill of clay with calcaire and loam topsoils, head trained, dry farmed, whole cluster fermented, foot treaded, neutral French oak, racked once before bottling, no sulfite added. Flash decanted day one, tasted three days running, singing at the 56th hour.
