Getting tertiary with tiny, gentle allusions to caramel, mint, buckwheat, and honeyed petrol (that last aromatic layer brings to mind an Austrian Chardonnay or Riesling). Still retains an amazing fresh acidity, an over-arching, saline mineral tanginess, and has become slightly honeyed. Drink now! Sang with a sauce Mornay gnocchi.
