Wow! This is fantastic and is killing it alongside sushi! The fresh apple aroma is melding seamlessly with the pickled ginger and the fruitiness of the sushi. So refreshing, lovely stuff. I would think this is peaking (if you prefer fresher, younger aromas vs honeyed torrefactive tertiary like mahself)

Fresh, focused, a little tight but that's a good thing for a Roussanne blend (can get flabby and heavy in a hurry), great acid
