Paired with fennel/lemon/shallot/thyme stuffed rainbow trout, romano beans (cooked Italian style), purple potatoes w/ olive oil and lemon juice. The sea influence, schist soil, herbal earth influences this delicious super subtle-buttery/oaky Chardonnay. Contrasts with dinner yet adds to the delicious complexity. #CebadaWines. — 10 years ago
The wine both contrasted and complemented the trout/fennel/thyme/shallot/lemon dinner. The wine and dinner never became "one," yet they played off each other. In the end, I actually preferred the wine with the Italian style romano beans, especially the olive oil and sea salt. Think the schist and sea-air influence of Santa Yvnez stepped up for those bites. I enjoyed, but think a slightly "richer" style Chardonnay would've pair a wee bit better.
