2012. Definitely slow to open up and and be Bordeaux about it. Entering its drinking timeline just now. After being open since 6 last eve....24-34 hours later..
The rad dried violet/flowers that showed on initial has finely integrated the oh-so-pretty nose with the multi-soft-grip palette. Super cool if you’re patient. Thanks Elias and Brad for letting me watch this one till it came around.....
A sleeper lies in your cellar if you’re sitting on this one. Cheers to the exploration of patience.

Next up on the vintage timeline after a 100 point wine. (If we are to assume the preferences of one man's palate!) Soft tannins, maybe a bit green though. Absolutely catering to my preferred style of Cabernet, finding more balance most Napa Valley designates. — 9 years ago

Full bodied and elegant.

Dry on the palate with nice complexity.

This is a very tasty Chardonnay from Israel.

Fruit forward with nice balance. Really enjoyed it by itself. A good quality wine.

A tiny production of only 550 bottles.

Aÿ - Vauzelle Terme Brut Champagne Pinot Noir 2009

Hmm. Not feeling it. First time with this producer and wine. It’s definitely a horse of a different color….Chalky and “grippy”. It’s grounded and very dry and one of the least sweet champagnes I have tried. It just didn’t get to any place very good for my palate. Gave it ample time but similar results across the timeline. — 3 years ago

For a better feel of this producer, I’d suggest trying any of their “700” series offerings. I’m not sure what current is, but they are a consistently delicious champagne if you enjoy a slightly bigger profile of champagne (whereas the single vineyard type you’re drinking may not be as forgiving in its youth).
